Ingredients:
- 2 cups mushrooms (use any button, oyster, shiitake, or mixed), sliced in chunks
- 4–6 large cloves garlic, minced
- 2–4 Thai red chillies, chopped (adjust to taste)
- 1 small onion, diced
- ½–1 cup bell peppers, diced
- 1 tbsp light soy sauce
- 2 tbsp Me Soo Yum Thai Chilli Jam
- ½ tsp white pepper or black pepper
- 2 tbsp Cold pressed oil (neutral flavoured oil)
- Handful of Thai basil
- Half cup spring onions, chopped
- 4–5 kaffir lime leaves or lemon zest of one lemon. (optional)
- Cashew nuts or peanuts for crunch (optional)
Directions:
Step 1:
Heat oil in a wok or large frying pan over medium-high heat.
Step 2:
Add garlic and chillies; sauté until aromatic but not burnt.
Step 3:
Add the mushrooms, onion and bell pepper if using. Stir-fry until mushrooms softens but retain some bite and moisture—about 2–3 minutes.
Step 4:
Add soy sauce, Me Soo Yum Thai Chilli Jam and pepper. Stir well to coat all mushrooms evenly.
Step 5:
If using lime leaves, or lemon zest add them now for fragrance.
Step 6:
Continue cooking until the sauce bubbles and reduces slightly, about 1–2 more minutes. If the pan becomes too dry, add a tablespoon of water.
Step 7:
Stir in Thai basil leaves just before turning off the heat.
Step 8:
Top with chopped spring onions and roasted cashews/peanuts.
Step 9:
To add some crunch , top it up with Me Soo Yum Chilli Garlic Crisps.
