Fried Chicken Burger with Black Bean Coleslaw

Ingredients:
- 2 boneless chicken breasts or thighs (pounded to even thickness)
- ¾ cup buttermilk
- 1 tsp salt
- Me Soo Yum Og Chilli Garlic Stir Fry Sauce
- 3 cloves of garlic, Minced
- ½ tsp black pepper
- 1 cup all-purpose flour
- ½ cup corn flour/cornstarch
- ½ tsp each salt and pepper (for flour mix)
- Oil for deep frying (Use cold pressed Sunflower oil)
For Black Bean Coleslaw
- Carrots, Julienned- ½ carrot
- Onion, thinly sliced- 1 small onion
- Cabbage, thinly sliced- ¼ cabbage
- Me Soo Yum Umami Black Bean Sauce– 2 tbsp
- Mayonnaise- 1 tbsp
- Vinegar- 1 tbsp
- Salt- ½ tsp
Mix all the ingredients together for the coleslaw
For the burger:
- 2–4 burger buns (brioche or regular)
- Cheese slice
Directions:
Step 1:
Marinate the Chicken:
- Mix buttermilk, salt, garlic, Me soo yum Og Chilli Garlic Stir fry sauce.
- Add chicken and marinate for at least 30 minutes (longer = juicier)
Step 2:
Prepare the Coating:
- In a separate bowl, combine flour, cornflour, salt, and pepper.
- Dredge marinated chicken in the flour mix, dip back into the marinade (For extra crunch), then dredge in flour mix again for a thick, craggy coating.
Step 3:
Fry the Chicken:
- Heat oil in a deep pan (170°C/340°F).
- Fry chicken for 4–5 minutes per side, until golden, crisp, and cooked through.
- Drain on paper towels
Step 4:
Toast and Assemble:
- Lightly toast buns in a dry pan or with a touch of butter.
- Spread Me Soo Yum Umami Black Bean Sauce on both sides of the bun. Layer coleslaw, the crispy fried chicken and cheese.
- Close the burger and serve hot.
