Sauces –
Me Soo Yum Bhut Jolokia Chilli Oil Infused with Honey,
Me Soo Yum Hot honey Chilli Stir Fry Sauce,
Me Soo Yum Og Chilli Garlic Stir Fry Sauce
Ingredients:
For the sauce:
- 1 tbsp soy sauce
- Me Soo Yum Hot Honey Chilli Stir Fry Sauce – 2 tbsp
- Me Soo Yum Og Chilli Garlic Stir Fry Sauce – 1tbsp
- 1 tbsp chilli vinegar or rice vinegar
- 2.5 tbsp tahini or roasted sesame paste
- 1 tbsp peanut butter (creamy or chunky)
- Optional: 1 tsp chilli flakes
- Salt and pepper to taste
For the noodle & topping:
- 2 tbsp Me Soo Yum Bhut Jolokia Chilli Oil Infused with Honey
- 6-8 cloves garlic, minced
- 1 tsp ginger paste
- 5-6 Button mushrooms (or white mushrooms), finely chopped
- 120 gms firm tofu, chopped or crumbled
- 4-5 scallions, chopped (whites and greens separated)
- 50 gms baby spinach (or sub baby bok choy, chard)
- Roasted peanuts and extra scallions for garnish (optional)
Directions:
Step 1:
Sauce:
- In a bowl, whisk together soy sauce, Me Soo Yum Hot Honey Stir Fry Sauce , Me Soo Yum Og Chilli Garlic Stir Fry Sauce, vinegar, tahini, peanut butter, chilli flakes (optional), salt, and pepper.
- Set aside
Step 2:
Noodles:
- Cook noodles in salted boiling water until al dente.
- Drain, rinse under cold water, and set aside.
Step 3:
Veggie Topping:
- Heat Me Soo Yum Bhut Jolokia Chilli Oil Infused with Honey in a wok or pan over medium heat.
- Add minced garlic and ginger paste, sauté 2 minutes until fragrant.
- Add chopped mushrooms. Sauté 4-6 minutes until softened.
- Stir in the whites of the scallions and half the greens for one minute.
- Add crumbled tofu, sauté until combined and heated through.
- Add spinach, cook 2-3 minutes until wilted.
Step 4:
Combine:

- Add the sauce to the pan, stir everything to coat, and cook 1-2 minutes.
- Add cooked noodles and toss to combine everything thoroughly (1-2 minutes).
- If the mixture is too dry, add more chilli oil.
Step 5:
Serve:
- Divide into bowls, garnish with scallion greens, roasted peanuts, and a drizzle of extra chilli oil if desired.
- Enjoy hot or cold.
