Sauces –
Me Soo Yum Scallion Pepper Dip
Ingredients:
- Salmon fillets – 4 pieces
- Banana leaves – cut into squares for wrapping. – 4 squares
- Ginger-Garlic paste – 1 tbsp
- Me Soo Yum Scallion Pepper Dip – 3 tbsp
- Green chilli paste – 1–2 tbsp (optional)
- Cold pressed Oil – 1–2 tbsp
- Lemon juice or vinegar – 1 tsp
- Salt to taste
- Soy sauce – 1–2 tbsp
Directions:
Step 1:
- Wilt banana leaves by briefly heating over an open flame—this prevents tearing when wrapping.
Step 2:
- Prepare marinade by blending ginger-garlic paste, Me Soo Yum Scallion Pepper Dip, green chillies, salt, lemon juice/vinegar, and a little oil.
Step 3:
- Coat Salmon pieces generously on both sides with the marinade.
Step 4:
- Place Salmon (with extra herbs or sauce, if desired) on the banana leaf; wrap to form tight parcels and secure with toothpicks or string.
Step 5:
- Steam in a preheated steamer for 10–20 minutes, depending on thickness; Salmon should be opaque and flake easily.
Step 6:
- Serve hot in banana leaf for the best flavour.
