Ingredients:
- English Cucumber-2
- 3 tbsp – Me Soo yum Thai Sweet and Sour Salad Dressing
- 2 tbsp – Me Soo Yum Garlic Chilli Crisps
- Lemon juice of 1 lime
- Salt to taste
- Roasted sesame seeds- 1 tsp
- Chives- ½ cup
- Roasted peanuts, crushed- ⅓ cup
Directions:
Step 1:
Prepare the cucumber:
- Thoroughly wash the cucumber to remove all the dirt.
- Since we are using an English cucumber, we can leave the skin on.
- Place the cucumber over 2 chopsticks and cut an angle to about 60 % of the cucumber height, and then flip it and cut the same way to achieve a spring like shape.
Step 2:
Mix the dressing in a bowl:
- In a bowl, stir well Me Soo Yum Thai Sweet and Sour Salad Dressing, Me Soo Yum Garlic Chilli Crisps, Lemon juice, salt, Roasted sesame and chives.
Step 3:
Combine all together:
- Pour the dressing over the cucumber and make sure that all of it is covered in the dressing. Let it sit in the refrigerator for 20 mins.
Step 4:
Serve:
- Transfer the cucumber to a serving plate and pour the remaining dressing on it.
- Garnish it with some crushed peanuts and serve cold.
