Ingredients:
For Avocado Toast:
- 1 ripe Avocado
- 2-3 slice of thick-cut bread (whole grain, sourdough, or your favourite type)
- 1 to 2 teaspoons freshly squeezed lemon juice
- Salt to taste
- Cherry Tomatoes cut in to half- 10 piece
- Me Soo Yum Thai Chilli Jam – 2 tbsp
- Me Soo Yum Scallion Pepper Dip – 2 tbsp
For Sunny Side Up Egg:
- 2 fresh eggs
- 1 to 2 tablespoons Me Soo Yum Bhut Jolokia Chilli Oil Infused with Honey ( adjust according to spice level)
- 1 tablespoon butter (optional, for richness and balancing spice)
- Salt and freshly cracked black pepper to taste
Directions:
Step 1:
Toast the bread until golden brown and crisp (about 2-3 minutes depending on your bread).
Step 2:
Prepare the avocado:
Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork to your preferred texture (smooth or chunky).
Step 3:
Add lemon juice to the mashed avocado to add freshness and prevent browning.
Step 4:
Add cherry tomatoes to the avocado
Step 5:
Season with salt. Mix well.
Step 6:
Spread Me Soo Yum Thai Chilli Jam on the bread and then Spread the avocado mixture evenly over the toast.
Step 7:
Drizzle a Me Soo Yum Scallion Pepper dip on top for richness.
Step 8:
For Sunny Side Up Egg:
- Place a nonstick skillet over medium heat.
- Add butter and Me Soo Yum Bhut Jolokia Chilli Oil with Honey, spreading the mixture evenly across the pan. The butter helps mellow the heat and adds richness, while chilli oil infuses the eggs with flavour.
- Crack the eggs into the pan, spacing them apart. Let them cook undisturbed for about 2–3 minutes until the whites are mostly set but the yolks remain runny.
- Using a spoon, gently scoop some of the hot chilli oil and butter mixture from the pan and drizzle it over the egg whites (avoid the yolks to keep them runny). This gentle basting helps the whites cook evenly and infuses more chilli flavour.
- Sprinkle salt and black pepper over the eggs to taste.
- Continue cooking without flipping until whites are fully set but yolks remain sunny and runny, about 1–2 more minutes.
- Transfer the eggs on the toast or just eat it as it is.
