Fried Chicken Burger with Black Bean Coleslaw

Ingredients:

  • 2 boneless chicken breasts or thighs (pounded to even thickness)
  • ¾ cup buttermilk
  • 1 tsp salt
  • Me Soo Yum Og Chilli Garlic Stir Fry Sauce
  • 3 cloves of garlic, Minced
  • ½ tsp black pepper
  • 1 cup all-purpose flour
  • ½ cup corn flour/cornstarch
  • ½ tsp each salt and pepper (for flour mix)
  • Oil for deep frying (Use cold pressed Sunflower oil)

For Black Bean Coleslaw

  • Carrots, Julienned- ½ carrot
  • Onion, thinly sliced- 1 small onion
  • Cabbage, thinly sliced- ¼ cabbage
  • Me Soo Yum Umami Black Bean Sauce– 2 tbsp
  • Mayonnaise- 1 tbsp
  • Vinegar- 1 tbsp
  • Salt- ½ tsp

Mix all the ingredients together for the coleslaw

For the burger:

  • 2–4 burger buns (brioche or regular)
  • Cheese slice

Directions:

Step 1:
Marinate the Chicken:
  • Mix buttermilk, salt, garlic, Me soo yum Og Chilli Garlic Stir fry sauce.
  • Add chicken and marinate for at least 30 minutes (longer = juicier)
Step 2:
Prepare the Coating:
  • In a separate bowl, combine flour, cornflour, salt, and pepper.
  • Dredge marinated chicken in the flour mix, dip back into the marinade (For extra crunch), then dredge in flour mix again for a thick, craggy coating.
Step 3:
Fry the Chicken:
  • Heat oil in a deep pan (170°C/340°F).
  • Fry chicken for 4–5 minutes per side, until golden, crisp, and cooked through.
  • Drain on paper towels
Step 4:
Toast and Assemble:
  • Lightly toast buns in a dry pan or with a touch of butter.
  • Spread Me Soo Yum Umami Black Bean Sauce on both sides of the bun. Layer coleslaw, the crispy fried chicken and cheese.
  • Close the burger and serve hot.
