Sauces –
Me Soo Yum Thai Sweet and Sour Salad Dressing
Ingredients:
- 1 cup uncooked quinoa
- 2 cups water (for cooking quinoa)
- Me Soo Yum Thai Sweet and Sour Salad Dressing– 4 tbsp
- 2 mangoes, peeled and diced
- Half raw mango, peeled and diced
- 1 red bell pepper, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup finely chopped red onion or sliced green onions
- 1/2 cup chopped fresh cilantro or parsley
- 1-2 Green chilli
- Boiled Chick-pea (white channa)
- 1/4 cup extra-virgin olive oil
- 3 tablespoons fresh lime or lemon juice
- Salt and black pepper, to taste
- Garlic, Diced- 5 cloves
- Dried cranberry- 2 tbsp
Directions:
Step 1:
Cook the Quinoa:
- Rinse 1 cup quinoa thoroughly under cold water.
- Combine with 2 cups of water in a saucepan; bring to a boil.
- Reduce heat, cover, and simmer for 12–15 minutes, or until water is absorbed.
- Remove from heat, fluff with a fork, and let cool
Step 2:
Prep the Veggies and Mango for Mango salsa:
- Dice the mango, raw mango, garlic, green chilli and onions.
- In a bowl mix all the ingredients and add Me Soo Yum Thai Sweet and Sour Salad Dressing.
- Adjust salt and pepper and add 1 tbsp Lemon juice
- Add chopped Cilantro/ coriander (half of it)
Step 3:
Mix the quinoa with veggies:
- In a large bowl, combine cooled quinoa, bell pepper, Cherry tomatoes, Chick- pea, cilantro/ coriander (half of it), and cranberry.
- Prepare the Dressing for quinoa: In a small bowl, whisk together olive oil,2 tbsp lime or lemon juice, salt, and pepper until emulsified
Step 4:
Toss and Serve:
- Drizzle the dressing over the quinoa and toss gently to combine.
- Adjust seasoning as needed.
- Put mango salsa over the quinoa
- Serve chilled or at room temperature.
