Sauces –

Me Soo Yum Thai Sweet and Sour Salad Dressing

Ingredients:

  • 1 cup uncooked quinoa
  • 2 cups water (for cooking quinoa)
  • Me Soo Yum Thai Sweet and Sour Salad Dressing– 4 tbsp
  • 2 mangoes, peeled and diced
  • Half raw mango, peeled and diced
  • 1 red bell pepper, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup finely chopped red onion or sliced green onions
  • 1/2 cup chopped fresh cilantro or parsley
  • 1-2 Green chilli
  • Boiled Chick-pea (white channa)
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons fresh lime or lemon juice
  • Salt and black pepper, to taste
  • Garlic, Diced- 5 cloves
  • Dried cranberry- 2 tbsp

Directions:

Step 1:
Cook the Quinoa:
  • Rinse 1 cup quinoa thoroughly under cold water.
  • Combine with 2 cups of water in a saucepan; bring to a boil.
  • Reduce heat, cover, and simmer for 12–15 minutes, or until water is absorbed.
  • Remove from heat, fluff with a fork, and let cool
 
Step 2:
Prep the Veggies and Mango for Mango salsa:
  • Dice the mango, raw mango, garlic, green chilli and onions.
  • In a bowl mix all the ingredients and add Me Soo Yum Thai Sweet and Sour Salad Dressing.
  • Adjust salt and pepper and add 1 tbsp Lemon juice
  • Add chopped Cilantro/ coriander (half of it)
 
Step 3:
Mix the quinoa with veggies:
  • In a large bowl, combine cooled quinoa, bell pepper, Cherry tomatoes, Chick- pea, cilantro/ coriander (half of it), and cranberry.
  • Prepare the Dressing for quinoa: In a small bowl, whisk together olive oil,2 tbsp lime or lemon juice, salt, and pepper until emulsified
 
Step 4:
Toss and Serve:
  • Drizzle the dressing over the quinoa and toss gently to combine.
  • Adjust seasoning as needed.
  • Put mango salsa over the quinoa
  • Serve chilled or at room temperature.
